Kit Carson was the last vestige of old school academia. I enrolled about a week late into 7th grade when most of the classes were taken and Mr. Bouchard(guidance counselor) had to scramble and assign me a schedule from what was left. One of those classes being Boys Foods. They had a classroom with about 6 galley kitchens, gave us recipes, explained the technique and turned us loose! It was taught by Mrs. Jones-and this was right around the time of that Billy Paul song, Can you imagine a room full of adolescent boys handling food and flame? Mrs. Jones used to say: "Children make me lose my religion!"These days cooking is kind of like painting. The ingredients are your pallet, The process is slightly meditative with a tinge of stress concerning the outcome and the end goal is to approximate what you have in your mind’s eye.
